Slow-Cooker Gingered Pork and Ramen Noodles

Slow-cooked pork roast infused with chicken-flavored ramen, snow peas, and soy sauce - irresistible Asian fusion dish.
Ingredients:
  • 2 packages (3 oz each) chicken-flavor ramen noodle soup mix
  • 1 lb boneless pork shoulder roast, cut into 1-inch pieces
  • 1 teaspoon grated gingerroot
  • 3 cups water
  • 1 cup halved fresh snow pea pods (about 4 oz)
  • 1/4 cup sliced green onions
  • 1 tablespoon soy sauce
  • 2 teaspoons cornstarch
Instructions:
  • Set aside the noodles from the soup mixes. In a 3 1/2 to 4-quart slow cooker, thoroughly combine the pork with the seasoning packets from the noodle soup mixes. Mix in the gingerroot and water until well combined.
  • Cover and let the magic happen as it simmers on the Low setting for 6 to 8 hours.
  • 25 minutes before serving, break reserved noodles and add to pork mixture along with pea pods and onions. Increase heat to High, cover, and cook for 10 to 15 minutes until vegetables are crisp-tender.
  • Combine soy sauce and cornstarch in a small bowl until smooth. Stir into the pork mixture and cook covered for about 5 minutes until the sauce slightly thickens.
