Spicy ginger fruit dessert with ready pie filling and cookies for quick indulgence.
Ingredients:
  • 3/4 cup quick-cooking oats
  • 3/4 cup crushed gingersnap cookies
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/2 cup butter or margarine, cut into small pieces
  • 1 cup frozen unsweetened blueberries
  • 1 cup frozen unsweetened raspberries
  • 1/2 teaspoon ground ginger
  • 1 can (21 oz) apple pie filling
Instructions:
  • Preheat your oven to 350°F. Grease a 12x8-inch (2-quart) glass baking dish with cooking spray. In a large bowl, mix together all topping ingredients except for the butter. Use a pastry blender or fork to cut in the butter until the mixture is crumbly.
  • Combine all the fruit mixture ingredients in a large bowl, then pour into a baking dish. Sprinkle the topping evenly over the fruit.
  • Bake for 35 to 40 minutes, or until the fruit mixture is bubbly and the topping is golden brown. If needed, cover with foil for the last 15 to 20 minutes to prevent over-browning.
