Modern twist on applesauce: Fresh apples with zesty crystallized ginger for a flavorful upgrade.
Ingredients:
  • 4 medium unpeeled cooking apples, coarsely chopped (4 cups)
  • 1/2 cup water
  • 2 tablespoons finely chopped crystallized ginger
  • 1 tablespoon packed brown sugar
  • 1/4 teaspoon ground cinnamon, if desired
Instructions:
  • Combine all ingredients in a 3-quart saucepan, leaving out the cinnamon. Cover and bring to a boil, then lower the heat and simmer for 15 to 20 minutes, stirring occasionally, until the apples are soft.
  • Using a spoon, gently mash the apples to your preferred texture. Dust with cinnamon. Enjoy either warm or chilled.
