Lebanese-inspired flatbread pizzas with spiced beef and pumpkin toppings for a quick and easy meal.
Ingredients:
  • 500g lean beef mince
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1.25 gm ground cinnamon
  • 300g butternut pumpkin, peeled, cut into 2cm pieces
  • 2 wholemeal Lebanese breads (30cm)
  • 165.00 ml pizza sauce with garlic, onion & herbs
  • 1/2 small red onion, thinly sliced
  • 200g grape tomatoes, halved
  • 165.00 ml grated mozzarella cheese
  • 40.00 ml pine nuts
  • Baby spinach, to serve
  • Coriander sprigs, to serve
  • Greek yoghurt, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat the oven to 200C (180C fan-forced) and line 2 large baking trays with baking paper.
  • In a large non-stick frying pan over medium-high heat, brown the mince in hot oil for 3 to 4 minutes. Stir in garlic and spices, cooking for an additional minute until fragrant.
  • Microwave the pumpkin on HIGH for 2 to 3 minutes until tender. Drain any excess liquid.
  • On the prepared baking trays, lay out Lebanese breads. Spread pizza sauce evenly on each bread. Top with mince mixture, onions, tomatoes, cheese, and pine nuts. Bake in the oven for 10 to 12 minutes until the bread is crisp and cheese is melted.
  • Arrange a vibrant mix of baby spinach and fresh coriander on top of the pizzas, then drizzle with creamy yogurt. Present alongside zesty lemon wedges for a burst of flavor.
