Whip up flavorful Middle Eastern beef and hummus wraps for a simple weeknight dinner.
Ingredients:
  • 5.00 gm ground cumin
  • 1 tsp grated lemon rind
  • 1/2 tsp cracked black pepper
  • 500g beef BBQ round steak
  • 200g pumpkin and harissa hommus
  • 4 large pita bread
  • 60g baby rocket leaves
  • 200g punnet Perino tomatoes, sliced
  • 1 Lebanese cucumber, seeded, sliced
  • 1 red onion, thinly sliced
  • 95g yoghurt
  • 62.50 ml fresh mint leaves
  • Grated lemon rind, extra, to serve
  • Oven-baked chips, to serve
Instructions:
  • Mix together cumin, lemon zest, olive oil, and black pepper in a spacious bowl. Season generously with salt, then add the beef and thoroughly coat it with the mixture.
  • Preheat a chargrill or frying pan over medium-high heat. Sear beef for 2 mins on each side to your desired doneness. Place on a heatproof plate, cover, and let it rest for 5 mins before thinly slicing.
  • Evenly layer the hummus onto the pita bread. Add arugula, tomato, cucumber, onion, beef, yogurt, fresh mint leaves, and extra lemon zest on top. Enjoy with some crispy chips on the side.
