Indulge in a Middle Eastern lamb mince pizza topped with hummus and cranberries for a flavorful feast.
Ingredients:
  • 27.30 gm olive oil, plus extra to brush and drizzle
  • 1 onion, chopped
  • 350g lamb mince
  • 1.25 gm ground cinnamon
  • 62.50 ml sweetened dried cranberries (Craisins), soaked in a little boiling water for 15 minutes
  • Two 24cm plain round pizza bases
  • 260g hommus
  • 40.00 ml toasted pine nuts*
  • 165.00 ml chopped flat-leaf parsley leaves
  • 165.00 ml crumbled feta
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 230°C for a perfect bake.
  • In a frypan, warm oil over low heat and sauté the onion, stirring occasionally, for 12-15 minutes until it caramelises. Add lamb and cook for 4-5 minutes until browned. Mix in cinnamon, drained cranberries, and season to taste.
  • Drizzle the pizza bases with a touch more oil, then bake in the oven for approximately 5 minutes, or until they turn a delicious golden brown.
  • Top the pizza bases with a generous layer of hummus, evenly distribute the mince mixture, pine nuts, parsley, and crumbled feta. Finish with a drizzle of olive oil before returning to the oven for 2 minutes to warm everything through.
  • Garnish with fresh lemon wedges for a burst of citrus flavor.
