Elevate your pizza with delicious Middle Eastern flair.
Ingredients:
  • 300g (2 cups) plain flour
  • 95g (1/3 cup) Greek Style Yoghurt, plus extra, to serve
  • 100ml olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 600g minced lamb
  • 5.00 gm ground cumin
  • 90g (1/3 cup) tomato paste
  • Coriander leaves, to serve
  • Lemon wedges, to serve
Instructions:
  • In a bowl, combine flour and 1 teaspoon of salt. Create a well in the center and add 125ml (1/2 cup) hot water, yogurt, and 2 tablespoons of oil. Stir until the mixture comes together. Transfer the dough to a lightly floured surface and knead until smooth. Shape it into a ball and wrap it in plastic wrap. Let it rest.
  • Preheat your oven to 220C with 2 heavy-based oven trays inside.
  • In a frying pan over medium heat, warm up the remaining 60ml (1/4 cup) oil. Sauté onion, garlic, and 1 1/2 teaspoons salt, stirring occasionally, until soft, about 5 minutes. Add lamb and brown it lightly for about 3 minutes, while breaking it up with a wooden spoon. Stir in spices, tomato paste, and 60ml (1/4 cup) water, and cook for an additional 2 minutes, stirring continuously.
  • Separate dough into 4 equal portions. Roll out each piece into a 12cm x 30cm rectangle on floured sheets of baking paper. Spread lamb mixture evenly over each pizza base and sprinkle chickpeas on top. Transfer 2 pizzas with baking paper onto each preheated tray and bake for 10 minutes, rotating trays halfway through, until bases are golden and crispy.
  • Dollop generous spoonfuls of additional yogurt on top of the pizzas, sprinkle with fresh coriander leaves, and accompany with lemon wedges for serving.
