Middle Eastern mixed grill beef plate

Create a mouthwatering mixed grill plate for a crowd with this quick and easy recipe.
Ingredients:
  • 60ml olive oil
  • 10.00 gm ground cumin
  • 10.00 gm smoked paprika
  • 2 garlic cloves, crushed
  • 4 Beef Scotch Fillet Steaks
  • 4 Lebanese eggplants, halved lengthways
  • 2 zucchini, thickly sliced diagonally
  • 280g yoghurt
  • 48.00 gm tahini
  • 40.00 ml flat-leaf parsley, chopped
  • 250g cherry tomatoes, quartered
  • 2 baby gem lettuces, quartered lengthways
  • 1 Lebanese cucumber, cut into ribbons
  • 2 pieces Lebanese bread, cut into pieces
Instructions:
  • In a small bowl, mix together oil, cumin, paprika, and half of the garlic. Massage one-third of the cumin mixture onto the steaks. In a large bowl, toss the eggplant and zucchini with the remaining cumin mixture until well combined.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill the steaks for 3 minutes on each side for a medium cook or to your preferred doneness. Place the steaks on a plate, cover them with foil, and let them rest for 5 minutes before slicing them thickly.
  • Grill the eggplant and zucchini until tender, about 2 minutes.
  • In a bowl, mix together yoghurt, tahini, parsley, and the rest of the garlic. Season to taste.
  • Assemble the beef, eggplant, zucchini, tomato, lettuce, cucumber, and bread on plates. Drizzle with the yoghurt mixture and serve.
