Elevate your steak dinner with a touch of exotic Middle Eastern flavors.
Ingredients:
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 36.40 gm olive oil
  • 4 x 260g beef T-bone steaks
  • 450g pkt Brand long grain white rice
  • 2 tsp grated lemon rind
  • 42.00 gm lemon juice
  • 35g dried cranberry
  • 35g dried apricot
  • 40.00 ml chopped pistachio kernels
  • 40.00 ml chopped flat-leaf parsley
  • Lemon wedges, to serve
Instructions:
  • Mix the cumin, coriander, and 1 tablespoon of oil in a small bowl. Add seasoning. Rub this flavorful mixture over the steaks. Grill the steaks on a barbecue or chargrill over medium-high heat for 3 minutes on each side for a medium cook or until they reach your preferred level of doneness. Place the steaks on a plate, cover with foil, and let them rest for 5 minutes before serving.
  • Microwave the rice according to packet instructions. Then, place the cooked rice in a large bowl and mix in lemon rind, lemon juice, remaining oil, cranberries, apricot, pistachios, and parsley. Season to taste.
  • Plate the steaks alongside the rice and garnish with lemon wedges.
