Middle Eastern watermelon and goat's cheese bites recipe

Try these refreshing watermelon bites for a simple and delicious snack!
Ingredients:
  • 1.6kg wedge seedless watermelon
  • 1/4 red onion, finely chopped
  • 20.00 ml red wine vinegar
  • 62.50 ml roughly chopped pistachio kernels, toasted
  • 82.50 ml frozen pomegranate seeds, thawed
  • 50g goat’s cheese, crumbled (see notes)
  • 62.50 ml small fresh mint leaves
  • Sumac, to serve
Instructions:
  • Separate and discard watermelon rind. Slice flesh into 2cm-wide pieces. Use a 4cm round cutter to create 25 rounds from the watermelon slices. Arrange on a spacious serving plate.
  • In a bowl, mix together onion, oil, and vinegar, then season to taste. Whisk until well combined. Add pistachio and pomegranate, and stir to combine. Spoon a bit of the pistachio mixture onto each piece of watermelon. Top with goat’s cheese and mint, then sprinkle with sumac before serving.
