Midnight feast slice

Create a decadent slice using a mix of pretzels, Snickers, potato chips, and jelly beans inspired by Momofuku Milkbar's famous 'compost cookies', topped with luscious dark chocolate.
Ingredients:
  • 250g butter, softened
  • 161.25 gm caster sugar
  • 90.00 gm brown sugar
  • 4.40 gm vanilla extract
  • 1 egg
  • 500.00 ml plain flour
  • 1.00 gm baking powder
  • 2 tsp instant espresso coffee powder
  • 3 x 53g Snickers chocolate bars, chopped
  • 82.50 ml jelly beans
  • 125.00 ml dark choc chips
  • 375.00 ml roughly broken pretzels
  • 500.00 ml roughly broken sea salt-flavoured potato chips (see Notes)
  • 180g dark chocolate, chopped
  • 83.33 gm thickened cream
Instructions:
  • Preheat the oven and generously grease a 20cm x 30cm lamington pan. Line the pan with baking paper, making sure to extend it 2cm above the edges.
  • Using an electric mixer, cream together butter, sugars, and vanilla until light and fluffy, about 5 minutes. Add the egg and mix until just combined. Stir in flour, baking powder, and coffee powder. Fold in Snickers, jelly beans, chocolate chips, pretzels, and potato chips until evenly distributed. Transfer the batter into the prepared pan and smooth the top with a spatula.
  • Bake until the top turns golden and feels firm to the touch, for about 30 to 35 minutes. Let it cool completely in the pan.
  • For delectable chocolate icing, combine chocolate and cream in a microwave-safe bowl. Heat on HIGH for 40 seconds, stirring until silky smooth with a metal spoon.
  • Spread a generous layer of icing over the slice and let it stand at room temperature for a minimum of 1 hour until it's fully set. Utilize ridged potato chips for their thickness, ensuring they remain crispy when cooked. Gently break the chips into large pieces, being careful not to crush them. Serve and enjoy.
