Whip up a quick and customizable Italian midnight pasta with just 5 ingredients for those busy nights.
Ingredients:
  • 8 ounces dried pasta, such as spaghetti
  • 1/2 to 1 (2-ounce) tin oil-packed anchovies (see recipe note)
  • 4 cloves garlic
  • 1 handful fresh parsley leaves (optional)
  • 2 to 3 tablespoons extra-virgin olive oil
  • 1/4 teaspoon red pepper flakes, plus more for serving
  • Grated Parmesan cheese, for serving
Instructions:
  • Prepare the pasta: Boil a pot of salted water. Cook the pasta until al dente, 1 minute less than package instructions. Save 1 cup of pasta water, then drain the pasta.
  • To prepare the sauce, chop the anchovies roughly after transferring them from the tin to a cutting board, keeping the reserved oil in the tin. In a large skillet over medium-low heat, combine the reserved oil with olive oil. Add the chopped anchovies, garlic, and red pepper flakes. Cook until the anchovies dissolve and the garlic starts to turn pale golden brown, about 2 to 3 minutes. Remove the skillet from heat if the pasta is not yet ready.
  • Stir in reserved pasta water and simmer until reduced by half, about 4-5 minutes. Add pasta and toss until sauce thickens, about 1-2 minutes. Remove from heat, sprinkle with parsley, and combine. Serve topped with grated Parmesan and optional red pepper flakes. Share your feedback below!
