Mouthwatering bourbon-soy-pineapple sauce over savory sauteed mushrooms and chicken thighs. Perfect over rice or pasta.
Ingredients:
  • 2 pounds chicken thighs
  • 1.25 cups pineapple juice
  • 3 tablespoons bourbon whiskey, or more to taste
  • 2 tablespoons soy sauce
  • 3 cloves garlic
  • 1 tablespoon brown sugar
  • 2 teaspoons butter, or to taste
  • 2 large mushrooms, sliced
Instructions:
  • Heat up your grill outdoors on high heat and brush the grate lightly with oil.
  • Season the chicken thighs generously with a good amount of salt and pepper.
  • Grill the chicken thighs for 7 minutes on each side until fully cooked and slightly charred. Check with a meat thermometer – the internal temperature should reach 165 degrees F (74 degrees C).
  • Cool the chicken until it's easy to handle, then slice it into strips and place in a spacious glass bowl.
  • Combine pineapple juice, bourbon whiskey, soy sauce, garlic, brown sugar, and black pepper in a saucepan. Cook over medium-low heat, stirring until sugar dissolves. Simmer until thickened, about 15-20 minutes.
  • As the sauce simmers, melt butter in a small skillet over medium-high heat. Sauté mushrooms in the hot butter until softened, for 3 to 5 minutes. Add the mushrooms to the simmering sauce.
  • Gently drape the savory mushrooms and flavorful sauce onto the succulent chicken strips, then mix together until fully enveloped.
