Savory millet pie: Millet, oats, tamari, potatoes, and carrot filling between flaky crusts.
Ingredients:
  • 1 egg, beaten
  • 1 cup oats
  • 1.5 cups water
  • 1 cup millet
  • 0.5 cup diced onion
  • 0.5 cup diced carrot
  • 0.5 cup diced celery
  • 0.5 cup diced potato
  • 0.25 cup safflower oil
  • 0.25 cup tamari sauce
  • 1 teaspoon ground allspice
  • 0.25 teaspoon ground nutmeg
  • 4 whole cloves
  • 1 recipe pastry for a 9-inch double crust pie
Instructions:
  • First, bring 1 cup of water and oats to a gentle boil in a saucepan, then simmer until the oats absorb the water, about 10 minutes. In a separate saucepan, bring 1 1/2 cups of water and millet to a boil, then reduce heat and simmer until the millet is tender and the water is absorbed, around 20 minutes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a large bowl, toss together oats, millet, onion, carrot, celery, potato, safflower oil, tamari, allspice, nutmeg, cloves, salt, and black pepper until well combined.
  • Place one pie crust pastry in a 9-inch pie pan. Fill with the prepared filling. Add the second pie crust pastry on top and seal the edges by pinching them together. Ventilate the pie by making a few holes in the crust. Brush the top crust with beaten egg.
  • Bake the pie until the crust is beautifully golden brown, approximately 40 minutes in the preheated oven.
