Microwave-baked stuffed peppers filled with savory millet, black beans, and tomatoes. Simple, gluten-free, and delicious vegetarian dish.
Ingredients:
  • 1 cup millet
  • 4 cups water
  • 4 cubes vegetable bouillon
  • 5 medium bell peppers
  • 3 medium tomatoes, chopped
  • 1 (15 ounce) can black beans, drained
Instructions:
  • In a saucepan, mix millet, water, and vegetable bouillon, bring to a boil. Cover, lower heat, and simmer for 15 minutes until water is absorbed.
  • Prepare the peppers by slicing off the tops and removing the seeds and cores. In a separate bowl, mix cooked millet with tomatoes and black beans. Fill the peppers with the mixture. Arrange the stuffed peppers in a glass baking dish and cover with plastic wrap.
  • Microwave peppers for 10 minutes, or until tender, flipping them every 2 to 3 minutes for even cooking.
