Millionaire's shortbread recipe

Delicious millionaire's shortbread with buttery shortbread, sticky caramel, crunchy peanuts, and chocolate layers. A decadent treat!
Ingredients:
  • 125g butter, softened
  • 55g caster sugar
  • 150g plain flour
  • 45g rice flour
  • 395g can sweetened condensed milk
  • 53.60 gm golden syrup
  • 20g butter
  • 70g peanuts
  • 200g dark chocolate, chopped
  • 20g copha or butter
Instructions:
  • Beat the butter and caster sugar with an electric mixer until pale and creamy in a bowl. Stir in the plain flour and rice flour until a dough forms, then shape into a disc.
  • Preheat your oven to 180°C. Line a 19cm x 29cm slice pan with baking paper, leaving the two long sides to hang over the edge.
  • Evenly spread the dough on the pan. Bake until lightly golden for 25-30 mins. Allow to cool before proceeding.
  • In a medium saucepan over medium heat, combine condensed milk, golden syrup, and butter. Stir constantly for 8-10 minutes until the caramel turns golden brown and pulls away from the side of the pan. Mix in the peanuts.
  • Pour the luscious peanut mixture over the buttery shortbread base and gently level it out. Let it cool to perfection.
  • In a heatproof bowl, melt the chocolate and copha or butter over a saucepan of simmering water, making sure the bowl doesn't touch the water. Stir for 3 minutes until smooth. Spread over the slice, sprinkle with salt, and let it set for 1 hour. Cut into pieces and enjoy!
