Indulge in an Aussie pavlova with Milo, chocolate, salted caramel, and pecans.
Ingredients:
  • 6 egg whites
  • 322.50 gm caster sugar
  • 20.00 gm cornflour
  • 4.40 gm vanilla extract
  • 1 tsp white vinegar
  • 62.50 ml Milo, plus extra to dust
  • 300ml thickened cream, whipped
  • 6 scoops vanilla ice-cream
  • 6 scoops Milo ice-cream
  • Chocolate sauce, to serve
  • Salted caramel sauce, to serve
  • Chopped pecans, to serve
Instructions:
  • Preheat your oven to 120C/100 fan-forced and prepare a 23cm round springform pan by greasing and lining the base and sides.
  • Whip egg whites and sugar in a large bowl with an electric mixer on medium speed until combined, about 1 minute. Increase the speed to high and continue beating for 10-12 minutes until the mixture becomes thick and glossy. Mix in cornflour, vanilla, and vinegar until well combined. Gently fold in Milo.
  • Transfer the mixture into the prepared pan. Bake for 1 hour and 30 minutes, or until it is crisp and dry. Switch off the oven and let the pavlova cool inside with the door slightly open for 2 hours. Once cooled, let it cool completely before serving.
  • Carefully move the delicate pavlova on baking paper to a serving plate. Add a layer of cream and sprinkle with extra Milo. Finish by adding ice-cream, sauces, and pecans on top. Serve promptly to enjoy at its best.
