Milo biscuits filled with strawberry jam - perfect for a sweet snack any time of day.
Ingredients:
  • 125g butter, softened
  • 4.40 gm vanilla extract
  • 90.00 gm firmly packed brown sugar
  • 125.00 ml Milo
  • 50.00 gm almond meal
  • 312.50 ml plain flour
  • 82.50 gm strawberry jam
Instructions:
  • Preheat your oven to 180C/160C fan-forced and prepare 2 large baking trays by lining them with baking paper.
  • With an electric mixer, whip up a creamy mixture of butter, vanilla, and sugar in a bowl. Incorporate the egg thoroughly. Then gently fold in Milo, almond meal, and flour using a wooden spoon until well combined.
  • With moist hands, shape 2 level tablespoons of mixture into balls. Space the balls 6cm apart on lined baking trays. Gently flatten them and create a 3cm-wide indentation in the center of each cookie using your thumb or the back of a spoon. Fill each hole with 1/2 teaspoon of jam.
  • Bake for 15 to 20 minutes, swapping trays halfway through, until light golden. Fill holes with 1/2 teaspoon of remaining jam. Cool on trays before serving.
