Ingredients:
  • 2 (25cm x 25cm) sheets frozen, ready rolled butter puff pastry
  • 20.60 gm milk
  • 30g flaked almonds
  • 34.40 gm demerara sugar
  • 125g creme fraiche
  • Ground cinnamon, to sprinkle
Instructions:
  • Preheat the oven to 200°C. Prepare two baking trays with non-stick baking paper. Cut four 12cm circles from the pastry sheets using a sharp knife or cutter, then place them on the trays.
  • Score the pastry in a diamond pattern using a sharp knife, ensuring not to cut completely through.
  • Gently coat the pastry with a touch of milk, then scatter over the flaked almonds and demerara sugar.
  • Bake until the pastry is golden, about 10 minutes. Remove from the oven and gently push down the center if it puffs up while still warm.
  • Top each galette with a spoonful of creme fraiche and a sprinkle of cinnamon for a delightful finish.
