Delicious mini cheesecakes, perfect for topping with fresh fruit or jelly. Serves 6.
Ingredients:
  • 0.33333334326744 cup graham cracker crumbs
  • 1 tablespoon white sugar
  • 1 tablespoon margarine, melted
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup white sugar
  • 1.5 teaspoons lemon juice
  • 0.5 teaspoon grated lemon zest
  • 0.25 teaspoon vanilla extract
  • 1 egg
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and generously grease a 6-cup muffin pan.
  • Combine graham cracker crumbs, sugar, and margarine in a medium bowl and blend with a fork until combined. Press a rounded tablespoon of the mixture firmly into the bottom of each muffin cup. Bake for 5 minutes in the pre-heated oven, then let it cool while keeping the oven on.
  • Combine cream cheese, sugar, tangy lemon juice, zesty lemon zest, and aromatic vanilla until light and airy. Incorporate the egg.
  • Fill each muffin cup with the creamy cheese mixture, leaving 1/4 of space on top. Bake at 325 degrees F (165 degrees C) for 25 minutes. Allow to cool in the pan before chilling in the refrigerator until serving.
