Delicious Anzac biscuits - sweet, buttery, and oaty treats perfect for lunchboxes or with tea.
Ingredients:
  • 50.00 gm quick oats
  • 42.50 gm desiccated coconut
  • 125.00 ml plain flour
  • 59.40 gm brown sugar
  • 60g butter
  • 26.80 gm golden syrup
  • 1.25 gm bicarbonate of soda
Instructions:
  • Preheat your oven to 160°C/140°C fan-forced and prepare 2 baking trays with baking paper.
  • In a large bowl, mix together oats, coconut, flour, and sugar. Create a well in the center. In a saucepan over medium heat, melt butter with syrup and 1 tablespoon of cold water for 2 to 3 minutes. Remove from heat and mix in bicarbonate of soda. Stir the butter mixture into the oat mixture.
  • Shape 2 level teaspoons of mixture into balls, spacing them 4cm apart on prepared trays. Gently flatten each ball with a fork. Bake for 10 to 12 minutes until golden. Let them rest on the trays for 5 minutes before transferring to a wire rack to cool. Serve and enjoy!
