Make simple mini mint ice cream treats reminiscent of 'Viennetta' for a stress-free Christmas dessert. Prep ahead for a delightful finale to your holiday meal.
Ingredients:
  • 2L choc-mint ice-cream, softened slightly
  • 200g mint dark chocolate, melted
  • 40g pkt Aero peppermint chocolate, finely chopped
Instructions:
  • Prepare eight 185ml (3/4 cup) mini loaf pans by greasing them and lining the base and sides with baking paper, ensuring the paper overhangs the two long sides.
  • Place the chocolate in a microwave-safe bowl. Microwave on Medium, pausing to stir halfway through, for 1 minute or until smooth. Transfer the melted chocolate into a sealable plastic bag and snip off a corner.
  • Spread half of the ice cream evenly into the lined pans. Cut a corner off the bag and drizzle half of the melted chocolate over the ice cream. Repeat with the remaining ice cream and chocolate. Sprinkle with Aero and freeze for 2 hours until set.
