Irresistibly easy mini chocolate cheesecakes with graham cracker crust, perfect for parties or a sweet treat on the go!
Ingredients:
  • 0.75 cup graham cracker crumbs
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons white sugar
  • 1.25 cups semisweet chocolate chips
  • 1.5 (8 ounce) packages cream cheese, softened
  • 0.5 cup white sugar
  • 1 large egg
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 300 degrees F (150 degrees C) and prepare a 12-cup muffin tin by lining it with paper liners.
  • Combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar in a small bowl. Press 1 tablespoon of the mixture into the bottom of each cup.
  • Set aside half a cup of chocolate chips for topping. Sprinkle the rest evenly over the crust layer in each cup.
  • In a large mixing bowl, whip together cream cheese, 1/2 cup sugar, egg, cocoa powder, and vanilla until velvety. Place about 1/4 cup of the cream cheese mixture into each cup. Finish by scattering the remaining chocolate chips on top.
  • Bake in the preheated oven until just set, for 17 to 23 minutes. Allow it to cool completely on a wire rack for 15 to 30 minutes.
  • Chill in the fridge for a minimum of 1 hour before serving.
