Ingredients:
  • 85g (1/2 cup) seedless raisins
  • 95g (1/2 cup) chopped dried figs
  • 100mls (5 tbsp) brandy or dark rum
  • Melted butter or margarine, to grease pans
  • 300g (2 cups) plain flour
  • 6.00 gm baking powder
  • 3.75 gm ground cinnamon
  • 2.50 gm mixed spice
  • 85g (1/2 cup) candied mixed peel
  • 80g (1/2 cup) pine nuts, toasted
  • 250g dark chocolate, chopped
  • 300g (3/4 cup) honey
  • 200g butter
  • 125mls (1/2 cup) unsweetened apple sauce
  • 125.00 ml apricot jam, to decorate
  • 285g (1 1/2 cups) chopped dried figs, extra
  • 100g (2/3 cup) pine nuts, extra, toasted
Instructions:
  • In a small saucepan, simmer raisins, chopped figs, and brandy or rum for 3 minutes over low heat. Remove from heat.
  • Preheat your oven to 160°C.
  • Gently coat 16 individual brioche pans or 16 medium (80mls or 1/3 cup capacity) muffin pans with the melted butter or margarine.
  • In a large bowl, combine plain flour, baking powder, cinnamon, and mixed spice. Add mixed peel, pine nuts, and 100g of chopped chocolate. In a small saucepan, melt honey butter with the remaining 150g of chocolate over medium heat until well combined. (Refer to microwave tip 2 for an alternative method.)
  • After taking the mixture off the heat, blend in the apple sauce along with the raisin and fig mixture. Create a hole in the middle of the dry mixture, pour in the honey blend, and mix thoroughly using a wooden spoon. Transfer the mixture into the pans and bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the center comes out clean. Let the pans sit for 5-10 minutes before flipping the cakes onto a wire rack to cool.
  • Heat the jam in a saucepan until warm, then brush it over the cakes. Decorate with extra figs and pine nuts, and brush generously with the remaining jam. Let it set before storing in an airtight container at room temperature for up to 5 days. Package them on the day of giving.
