Ingredients:
  • 86.63 gm apple juice
  • 375g Mixed Fruit
  • 62.50 ml dried apricots, chopped
  • 75g butter, softened
  • 59.40 gm brown sugar
  • 2.20 gm vanilla essence
  • 1 egg, at room temperature
  • 75.00 gm self-raising flour
  • 1.25 gm mixed spice
  • 95.00 gm dark choc bits
  • 250g packet ready-made white icing
Instructions:
  • Microwave apple juice on HIGH for 1 minute in a microwave-safe bowl. Mix in dried fruit and apricot, cover, and let sit for 1 hour, stirring occasionally.
  • Preheat your oven to 160°C. Grease two mini muffin pans with a 1 1/2 tablespoon (30ml) capacity. Use an electric mixer to cream together butter, brown sugar, and vanilla until light and fluffy. Add the egg and mix well. Fold in the fruit mixture, then sift in the flour and spice, stirring until just combined. Gently mix in the chocolate bits.
  • Fill muffin holes with mixture until they are full, then smooth the surface. Bake for 25 to 30 minutes or until a skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes, then carefully loosen the cakes by running a knife around the edges. Transfer onto a wire rack to cool completely.
  • Roll out the icing to a 5mm thickness between 2 sheets of baking paper. Use a 5cm star-shaped biscuit cutter to cut out stars. Place the stars on top of the cakes with points hanging over the edges. Enjoy or wrap as a thoughtful gift.
