Irresistible Cinnamon Chex™ snack mix features cute mini cinnamon rolls made with pie crust, cinnamon, and sugar.
Ingredients:
  • 3 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
  • 1 tablespoon butter, melted
  • 1/4 cup white vanilla baking chips (from 11-oz bag)
  • 6 cups Cinnamon Chex™ cereal
  • 1/4 cup butter
  • 2 tablespoons sugar
Instructions:
  • Preheat your oven to 425°F and prepare a large cookie sheet by lining it with cooking parchment paper.
  • In a small bowl, combine 3 tablespoons of sugar with cinnamon. Unroll pie crust on a lightly floured surface and fold in half. Roll it out into a 13x9-inch rectangle. Brush with 1 tablespoon of melted butter and sprinkle with the sugar mixture, leaving a 1/4-inch border.
  • Roll the filled dough tightly into a log, sealing the seam and ends securely. Refrigerate until firm, approximately 30 minutes.
  • Trim the ends of the dough log to form a 12-inch log. Slice the log into 40 pieces to make cinnamon rolls. Place the rolls on a baking sheet and bake for 8 to 10 minutes until light golden brown. Remove from the oven and cool slightly before serving.
  • Melt white vanilla baking chips in the microwave, stirring halfway through, until smooth. Transfer to a plastic bag, snip off a corner, and drizzle over cooled rolls. Chill for 15-20 minutes until set.
  • Line a large rimmed cookie sheet with waxed paper. Place the cereal in a large microwavable bowl. In a small microwavable bowl, melt 1/4 cup butter uncovered on High for 20 to 40 seconds. Stir in 2 tablespoons sugar and microwave for about 30 seconds or until sugar is dissolved. Pour the butter mixture over the cereal, ensuring it is evenly coated. Microwave uncovered on High for 3 to 5 minutes, stirring after every minute, until the mixture is thoroughly glazed. Spread the mixture on the cookie sheet and let it cool for 15 minutes.
  • Combine cereal and cinnamon rolls in a large serving bowl.
