Ingredients:
  • 30 Mini Croissants, split
  • 4 Roma tomatoes, cut into thirds
  • olive oil cooking spray
  • 200g fresh ricotta cheese
  • 4 rashers bacon, cut into thirds
  • 200g tasty cheese, thinly sliced
  • 200g light cream cheese
  • 200g smoked salmon
  • 20.00 ml baby capers, drained
Instructions:
  • Preheat your oven to 180°C while preparing 3 baking trays by lining them with baking paper.
  • Prepare the tomatoes by placing them in a roasting pan, spraying them with oil, and seasoning with sea salt flakes and freshly ground black pepper. Roast on the top shelf of the oven for 25 to 30 minutes until slightly dried. Spread ricotta cheese on the bottom halves of 10 croissants, then layer with the roasted tomatoes and croissant tops. Arrange on a baking tray.
  • Heat a frying pan over medium-high heat. Cook bacon for 3 minutes on each side until crisp. Drain on paper towels. Fill 10 croissants with bacon and cheese, sprinkling pepper over the cheese. Arrange on a baking tray.
  • Assemble the remaining 10 croissants on a baking tray. Spread cream cheese on the bases, then layer with salmon, onion, and capers. Season with pepper and add the croissant tops. Bake all trays in the oven for 10 minutes or until heated. Serve and enjoy.
