Surprise-filled mini tarts with Fantail candy, creamy custard, and store-bought shells are a delightful and effortless sweet treat for lolly fans.
Ingredients:
  • 3 x 150g packets bought mini tart shells
  • 18 Allen’s Fantales, unwrapped, halved
  • 250ml (1 cup) thickened cream
  • 2 eggs
  • 2 egg yolks
  • 40.00 gm caster sugar
  • 1 1/2 tsp vanilla bean paste
  • Icing sugar, to dust (optional)
Instructions:
  • Preheat the oven to 180C/160C fan forced. Line a baking tray with baking paper and arrange the foil-wrapped tart shells on it. Fill each tart shell with two Fantale halves, then bake for about 5 minutes until they soften.
  • Whisk cream, egg, egg yolks, caster sugar, and vanilla in a bowl until smooth. Strain the mixture through a fine sieve into a large jug. Pour the strained mixture evenly into tart shells. Bake for 17 minutes until custard sets. Let cool for 15-20 minutes before serving.
  • To enjoy, serve the dish warm or at room temperature, and sprinkle with icing sugar if desired.
