Keto mini frittata muffins: eggs, cheese, tomatoes, green peppers. Perfect for any meal or surprise visitors.
Ingredients:
  • 12 eggs
  • 2 tablespoons milk
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 1 large tomato, finely chopped
  • 1 large green bell pepper, finely chopped
  • 2 cups shredded Colby-Jack cheese
Instructions:
  • Preheat the oven to a toasty 395 degrees F (200 degrees C) and give the muffin pan a quick spritz of non-stick cooking spray.
  • In a bowl, whisk together eggs, milk, salt, and pepper until smooth and well combined.
  • Divide the tomatoes and green peppers among the muffin cups and top with Colby-Jack cheese. Fill each muffin cup to the top with the egg mixture and gently stir with a fork to evenly distribute the ingredients.
  • Bake until tops are golden brown in the preheated oven for approximately 20 minutes. Allow to cool in the pan for 5 minutes before serving.
