Kid-friendly mini frittatas with sausage, tomato sauce, and cheese - a pizza-inspired delight!
Ingredients:
  • Fresh basil leaves, torn
  • 4 tablespoons extra-virgin olive oil, divided
  • 0.5 pound Smithfield® Breakfast Sausage
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 12 eggs
  • 0.25 cup grated Parmesan cheese
  • 1 teaspoon hot sauce (such as Tabasco®)
  • Salt and pepper
  • 2 cloves garlic, chopped
  • 3 tablespoons grated onion
  • 0.5 teaspoon dried oregano
  • 1 cup crushed tomatoes
  • 0.5 cup shredded mozzarella cheese
  • A small handful flat-leaf parsley, chopped
Instructions:
  • Preheat your oven to a toasty 350 degrees F.
  • Heat a drizzle of olive oil in a pan over high heat. Cook the sausage, breaking it up as it browns, for 5 to 7 minutes. Add the chopped peppers and cook until soft, about 5 minutes. Remove from heat and allow to cool.
  • Combine eggs, Parmesan, hot sauce, salt, and pepper in a large bowl. Mix in cooked sausage and peppers. Grease a 12-cup muffin tin with olive oil cooking spray and pour in the egg mixture.
  • Place in the warm oven and bake for 15 minutes.
  • In a separate skillet, warm the rest of the olive oil over medium-high heat. Sauté garlic, onion, and oregano for 2 to 3 minutes, stirring occasionally. Stir in the tomatoes and let it simmer for about 10 minutes until thickened.
  • Take the mini frittatas out of the oven and add a dollop of sauce and a sprinkle of mozzarella on each. Put them back in the oven for 5 minutes to melt the cheese. Garnish with parsley and basil before serving.
