Make delectable French gratins to pair with your next roast.
Ingredients:
  • 250g sweet potato
  • 300g desiree potato
  • 150g beetroot, peeled
  • 9.20 gm olive oil
  • 1 red onion, thinly sliced
  • 175g bacon, cut into matchsticks
  • 1 clove garlic, crushed
  • 82.50 gm white wine
  • 200g brie, cut into 1cm cubes
  • 2 tsp fresh thyme leaves
  • 83.33 gm cream
Instructions:
  • Preheat the oven to 200C/180C fan forced. Slice the sweet potato, desiree potato, and beetroot into matchsticks using a knife or mandolin.
  • In a saucepan, warm olive oil over medium heat. Add red onion and bacon, cook for 5 minutes while stirring. Mix in garlic, cook until fragrant for about 1 minute. Pour in white wine, cook for 2 minutes.
  • Combine the potato, brie, and thyme, then fold in the beetroot. Portion the mixture into eighteen lightly greased 2-tbs pans. Finish by drizzling cream over the top.
  • Bake until golden and bubbling, for about 25-30 minutes. Let it rest in the pan for 5 minutes before serving.
