Mini gugulhupf cakes with cinnamon sugar

Enjoy these mini cakes warm for ultimate deliciousness.
Ingredients:
  • 200g plain flour
  • 2.00 gm baking powder
  • 0.63 gm bicarbonate of soda
  • 0.63 gm ground nutmeg
  • 440g caster sugar
  • 60ml rum
  • 60ml milk
  • 60ml sunflower oil
  • 4.40 gm vanilla extract
  • 2.50 gm ground cinnamon
  • Strawberry jam, to serve
Instructions:
  • Preheat the oven to 180°C. Grease and lightly flour six 1-cup (250ml) mini gugelhupf moulds. In a bowl, sift together the flour, baking powder, bicarbonate of soda, and nutmeg, then stir in 1 cup (220g) sugar. In another bowl, whisk together the eggs, rum, milk, oil, and vanilla. Gradually add the flour mixture and combine. Divide the batter among the moulds and bake for 35-40 minutes until the cakes are risen and pale golden.
  • In a shallow dish, mix the cinnamon with the remaining 1 cup (220g) of sugar. After cooling the gugelhupf cakes slightly in the molds, gently invert them and coat them in the warm cinnamon sugar. Serve warm with a spread of jam.
