Mini Hot Chocolate Cakes

Indulge in decadent molten chocolate lava cakes with a rich, gooey center.
Ingredients:
  • 5 ounces semisweet or bittersweet baking chocolate, chopped
  • 1/2 cup plus 2 tablespoons butter or margarine
  • 3 eggs
  • 3 egg yolks
  • 1 1/2 cups powdered sugar
  • 1/2 cup Gold Medal™ all-purpose flour
  • Additional powdered sugar, if desired
  • 1 can (21 ounces) cherry pie filling, if desired
Instructions:
  • Preheat oven to 450°F. Grease six 6-ounce custard cups with shortening. In a 2-quart saucepan, melt chocolate and butter over low heat, stirring often. Let cool for a bit.
  • In a large bowl, vigorously whisk together eggs and egg yolks until fully combined. Mix in 1 1/2 cups of powdered sugar, then add the melted chocolate mixture and flour. Distribute the batter evenly into the custard cups.
  • Bake for 11 to 13 minutes until the edges are set and the center of the cakes feels soft to the touch. Run a small knife or metal spatula along the sides of the cakes to release them. Quickly invert onto individual plates and remove the cups. Dust with powdered sugar, add pie filling, and serve warm.
