Elevate your party with delicious and nutritious twists on classic dishes.
Ingredients:
  • 24 small chat potatoes
  • Olive oil cooking spray
  • 82.50 ml grated reduced-fat tasty cheese
  • 1/2 medium avocado, mashed
  • 1/2 small tomato, deseeded, finely diced
  • 2 tsp finely chopped fresh coriander leaves
  • 10.60 gm lemon juice
  • 25g shaved ham, chopped
  • 1/2 x 225g can pineapple pieces in juice, drained, chopped
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Lightly grease a large baking tray and place the potatoes on it. Give them a light spray with oil. Bake for 45 to 50 minutes until they are tender when a skewer is inserted into the center.
  • Prepare flavorful Mexican filling by mixing ripe avocado, juicy tomato, fresh coriander, and zesty lemon juice in a bowl. Add a pinch of pepper to enhance the taste.
  • Create a delectable Hawaiian filling by mixing together ham and pineapple in a bowl.
  • Preheat the grill on high. Make a deep cross in the top of each potato, then gently squeeze the base to open the top using a tea towel. Fill half of the potatoes with a Hawaiian filling and the other half with a Mexican filling. Sprinkle with cheese. Grill for 5 minutes or until cheese melts. Serve and enjoy!
