Mini Meatloaves and Roasted Veggies

Meatloaf muffins topped with pasta sauce, served with roasted veggies.
Ingredients:
  • 1 pound lean ground beef
  • 0.5 cup finely chopped onion
  • 1 (24 ounce) jar RAGÚ® Old World Style® Traditional Sauce, divided
  • 0.33333334326744 cup panko bread crumbs
  • 2 tablespoons chopped fresh Italian parsley
  • 0.5 teaspoon salt, divided
  • 0.25 teaspoon freshly ground pepper
  • 4 cups assorted vegetables, such as quartered mushrooms, broccoli florets, sweet pepper cut into 1-inch pieces, or zucchini cut into 1-inch chunks
Instructions:
  • Preheat your oven to 375 degrees F. Line a 15x10x1-inch baking pan with foil and coat a twelve 2 1/2-inch muffin tin with nonstick cooking spray; set both aside.
  • Mix together beef, onion, 1/2 cup of savory RAGÚ® Old World Style® Traditional Sauce, bread crumbs, egg, parsley, garlic, 1/4 tsp salt, and a dash of pepper in a medium bowl.
  • Spoon the mixture into muffin cups, ensuring each cup is packed with meat mixture.
  • Toss the vegetables in a large bowl with oil, remaining salt, and remaining pepper. Transfer to the baking pan and place in the oven on one rack. Bake for 30 minutes or until the meat loaves reach 160 degrees F. Remove from oven, unmold meatloaves, and serve topped with warm RAGÚ® Old World Style® Traditional Sauce. Serve with vegetables on the side and garnish with chopped parsley.
