Mini Meatloaves and Cheesy Mashed Potatoes

Mini meatloaves topped with melted cheese, served with creamy mashed potatoes and sweet corn for a quick and delicious meal!
Ingredients:
  • 3 tablespoons margarine or butter, melted
  • 2 cups hot water
  • 2/3 cup milk
  • 1 package Hamburger Helper™ Oven Favorites® meat loaf & mashed potatoes
  • 1 cup shredded Cheddar cheese (4 ounces)
  • 1 pound lean ground beef
  • 1/4 cup milk
  • 1 bag (1 pound) frozen extra sweet whole kernel corn
  • 2 tablespoons water
Instructions:
  • Position the oven rack in the center. Preheat the oven to 350°F. (Keep the pan supplied aside.)
  • Combine melted margarine, 2 cups hot water, 2/3 cup milk, dry potatoes, and cheese in a 1 1/2-quart casserole or ovenproof bowl until thoroughly blended (the mixture will be thin). In a separate medium bowl, mix beef, 1/4 cup milk, egg, and seasoning mix until well combined. Press the beef mixture into 12 ungreased regular-size muffin cups, filling each cup 3/4 full.
  • Place the potatoes and mini meatloaves in the oven and bake uncovered for 30 to 35 minutes until the meatloaves are fully cooked. In the meantime, combine corn and 2 tablespoons of water in the paper pan. Cover with plastic wrap and microwave on High for 7 to 11 minutes, stirring halfway through. Season the corn to taste after draining.
  • - Take the meatloaves and potatoes out of the oven with care. - Using scissors, snip off a corner of the Tomato Sauce Topping pouch. - Squeeze and spread the topping evenly over the top of each meatloaf. - Serve the mini meatloaves and potatoes alongside corn.
