Grilled Cheese and Bacon Mini Meatloaves

Grilled meatloaf for a summer delight!
Ingredients:
  • 1 lb extra-lean (at least 90%) ground beef
  • 1/4 cup Progresso™ plain bread crumbs
  • 3 tablespoons ketchup
  • 1 teaspoon onion salt
  • 1/2 cup shredded Cheddar cheese (2 oz)
  • 4 slices center-cut bacon (about 3 1/2 oz), cut crosswise in half
Instructions:
  • Preheat your gas or charcoal grill for indirect cooking according to the manufacturer's instructions.
  • In a large bowl, combine all ingredients except bacon. Shape the mixture into a 7-inch square on a work surface. Cut into 4 (3 1/2-inch) squares and then top each square with 2 half-slices of bacon, securing them with toothpicks.
  • Prepare the grill rack by coating it with cooking spray. Position the patties on the unheated side of a two-burner gas grill or above a drip pan on a charcoal grill set to medium heat. For a one-burner gas grill, cook the patties over low heat. Cover the grill and cook for 20 to 25 minutes or until the patties are slightly pink in the center.
  • Flip the patties with a spatula, cover the grill, and cook for 5 to 8 minutes more until the meat thermometer reads 160°F in the center of the patties and the bacon is crispy. Remember to remove the toothpicks before serving.
