Savor the bold flavors of black and blue burgers in mini meatloaves from our cookbook. Indulge in perfectly portioned meatloaves packed with tangy blue cheese and zesty black pepper.
Ingredients:
  • 1/2 lb lean (at least 80%) ground beef
  • 1/3 cup Progresso™ Plain Panko Crispy Bread Crumbs
  • 1/4 cup crumbled blue cheese (1 oz)
  • 2 tablespoons sliced green onions (2 medium)
  • 1 tablespoon chopped fresh Italian (flat-leaf) parsley
  • 1 tablespoon milk
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon seasoned pepper
  • 1 egg
  • Crumbled blue cheese, if desired
  • Sliced green onions, if desired
Instructions:
  • Preheat the oven to 350°F. Combine all ingredients, excluding the toppings, in a medium bowl. Form the mixture into two small loaves measuring 4x2 inches each. Put the loaves in two ungreased loaf pans measuring 4 1/2x2 1/2 inches.
  • Bake without a lid for 30 to 35 minutes, or until the center of the loaves is no longer pink and a thermometer inserted reads 160°F.
  • Allow to sit for 5 minutes before removing from pans, then decorate with Toppings.
