Buffalo chicken nacho bowl: Layered with chips, black beans, Cheddar and blue cheese. Delicious!
Ingredients:
  • 1 pound shredded rotisserie chicken
  • 0.25 cup Buffalo wing sauce
  • 1 (16 ounce) package tortilla chips
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (8 ounce) package shredded sharp Cheddar cheese
  • 0.5 cup sour cream
  • 0.25 cup crumbled blue cheese
  • 1 tablespoon chopped jalapeno peppers, or to taste
  • 1 tablespoon chopped green onion, or to taste
Instructions:
  • Preheat oven to 425°F (220°C) for perfect baking results.
  • Mix chicken with tangy Buffalo wing sauce in a bowl.
  • Start by creating a base with a layer of tortilla chips in a baking dish, then add Buffalo chicken mixture, black beans, and Cheddar cheese. Repeat the layers with the remaining ingredients for a delicious finish.
  • Bake in the preheated oven for 10 to 15 minutes until the cheese is melted. Use aluminum foil to cover the nachos if the top is browning too quickly.
  • Garnish nachos with dollops of sour cream, crumbled blue cheese, sliced jalapeño peppers, and chopped green onion.
