Flavorful buffalo chicken nachos with crispy chips, spicy chicken, and creamy blue cheese dressing.
Ingredients:
  • cooking spray
  • 0.75 cup blue cheese salad dressing, divided
  • 0.5 cup cayenne pepper sauce (such as Frank's® RedHot®)
  • 2 tablespoons butter, melted
  • 2 cups shredded cooked chicken
  • 1 (13 ounce) package restaurant-style white corn tortilla chips (such as Tostitos®)
  • 1 large tomato, seeded and chopped
  • 0.5 cup sliced black olives
  • 0.33333334326744 cup diced red onion
  • 0.25 cup pickled jalapeno pepper slices
  • 4 ounces precooked bacon, crumbled
  • 1.5 cups shredded Mexican cheese blend
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • Preheat the oven to 400°F (200°C). Line a large baking sheet with foil and coat it with cooking spray.
  • Mix together 1/4 cup of blue cheese dressing, a dash of cayenne pepper sauce, and melted butter until smooth. Add chicken and mix until evenly coated.
  • Arrange a layer of tortilla chips on the baking sheet. Sprinkle on diced tomatoes, sliced olives, onion, and jalapeño peppers. Add the seasoned chicken mixture on top of the veggies and finish by sprinkling crumbled bacon over everything.
  • Combine the cheeses in a bowl, then evenly sprinkle the mixture over the chicken.
  • Bake in the hot oven until the cheese is melted and golden brown, for 10 to 15 minutes.
  • Take the nachos out of the oven and generously drizzle the remaining 1/2 cup of blue cheese dressing on top. Sprinkle with fresh cilantro for a vibrant finish.
