Skinny Mini Pizza Meatloaves

Indulge in Turkey Mini Pizza Meatloaves, made with organic pizza sauce and original bran cereal for a cheesy, flavorful twist on a classic favorite!
Ingredients:
  • 1 cup Fiber One™ original bran cereal
  • 1 can (15 oz) Muir Glen™ organic pizza sauce
  • 1/4 cup fat-free (skim) milk
  • 3/4 cup coarsely chopped turkey pepperoni
  • 1/4 cup fat-free egg product
  • 1 teaspoon dried oregano leaves
  • 1/4 teaspoon salt
  • 1 1/2 lb extra-lean (at least 93%) ground beef
  • 1/2 cup shredded reduced-fat mozzarella cheese (2 oz)
Instructions:
  • Preheat oven to 450°F. Place the cereal in a resealable plastic bag and finely crush it using a rolling pin, meat mallet, or food processor.
  • Set aside 3/4 cup of the pizza sauce in a small bowl. Combine crushed cereal, the rest of the pizza sauce, and milk in a large bowl (the mixture will be thick) and allow it to sit for 5 minutes.
  • Combine 1/2 cup of chopped pepperoni, egg product, oregano, and salt with the cereal mixture. Mix well. Incorporate the ground beef until fully combined.
  • Prepare a 15x10-inch pan by spraying it with cooking spray. Transfer the meat mixture to the pan and shape it into a 12x4-inch rectangle. Divide the rectangle lengthwise down the center and then crosswise into quarters to create 8 loaves. Use a spatula to separate the loaves so they are not touching. Spoon the reserved pizza sauce on top of each loaf and spread it evenly to cover the top.
  • Bake for 20 to 24 minutes until loaves are no longer pink in the center and reach 160°F when checked with a meat thermometer. While baking, combine 1/4 cup chopped pepperoni with cheese in a bowl. Sprinkle the mixture evenly over each loaf and bake for an additional 3 to 5 minutes until the cheese is melted.
