Spinach and Cheddar mini omelets: Wholesome, portable breakfast for all!
Ingredients:
  • cooking spray
  • 16 ounces egg substitute
  • 1 (10 ounce) package frozen chopped spinach - thawed, drained, and squeezed dry
  • 1 cup diced bell peppers
  • 1 cup shredded Cheddar cheese
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C and generously coat a 12-cup muffin tin with cooking spray.
  • Combine the egg substitute, spinach, bell peppers, Cheddar cheese, salt, and black pepper in a bowl, then spoon the mixture into the muffin cups.
  • Bake in the oven until the tops are golden brown, for about 25 minutes.
