Mini Italian Meatloaves

Savory mini meatloaves bake faster and are perfect for a quick family meal.
Ingredients:
  • 1 1/2 lb extra-lean (at least 90%) ground beef
  • 1/2 cup Progresso™ Italian-style dry bread crumbs
  • 1/2 cup pepperoni-flavored pizza sauce (from 14-oz jar)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, finely chopped
  • 1 egg
  • 1/4 cup shredded Italian-style six-cheese blend or mozzarella cheese (1 oz)
  • Additional pizza sauce, heated, if desired
Instructions:
  • Preheat your oven to 350°F. Combine all ingredients in a large bowl, excluding the cheese and extra pizza sauce. Fill 12 regular-size muffin cups with the beef mixture (they will be quite full). Place the muffin pan on a cookie sheet before placing it in the oven to prevent any drips.
  • Bake for around 30 minutes or until the loaves are cooked through and a meat thermometer inserted into the middle of the loaves reads 160°F.
  • Sprinkle each loaf with 1 teaspoon of cheese and bake for an additional 1 to 2 minutes until the cheese is melted. Remove the loaves from the cups right away and serve with pizza sauce.
