Delicate mini meringues made with egg whites, sugar, and vanilla. Perfect for pairing with your favorite hot beverage.
Ingredients:
  • 2 large egg whites
  • 0.5 cup superfine sugar
Instructions:
  • Preheat the oven to a toasty 300 degrees F (150 degrees C) and elegantly line a baking sheet with parchment paper.
  • Using an electric mixer, whip egg whites in a large bowl until they form stiff peaks. Slowly add sugar until the mixture feels smooth between your fingers, not gritty. Gently fold in vanilla.
  • Use a piping bag or spoon to place small portions onto the prepared baking sheet.
  • Bake in the preheated oven for 35 minutes until dry but not brown. Allow meringues to cool inside the oven for at least 25 minutes after turning it off.
