Irresistibly crispy mini meringues with a decadent sweet topping - a guaranteed hit with any crowd.
Ingredients:
  • 125g punnet raspberries
  • 30.00 gm icing sugar
  • 252.50 gm thickened cream
  • 8-12 bought meringue nests
  • 1 large sliced mango
Instructions:
  • Combine raspberries with a touch of sweetness from icing sugar in a bowl. Gently mash them with a fork and set aside for later use.
  • Whip cream with 1 1/2 tablespoons icing sugar in a bowl until soft peaks form. Gently fold in half of the raspberry mixture until just combined.
  • Divide the luscious cream mixture among the meringue nests. Top with mango slices and drizzle over the rest of the raspberry mixture for a delightful finishing touch.
