Irresistible crispy meringue filled with fresh seasonal fruit.
Ingredients:
  • 4 eggwhites
  • 215.00 gm caster sugar
  • 1 tsp white vinegar
  • 505.00 gm thickened cream
  • 2 thinly sliced mangoes, sliced thinly
  • 6 passionfruit, pulp removed
Instructions:
  • Preheat the oven to 140°C and prepare a baking tray lined with nonstick baking paper.
  • In an electric mixer bowl, whip egg whites until soft peaks form. Gradually add caster sugar, beating well after each addition until mixture is thick and glossy. Gently fold in white vinegar.
  • Spread the mixture onto the tray and shape it into a disc using a large spatula.
  • Bake in a preheated oven for 1 hour 15 minutes until a skewer inserted into the center comes out clean. Let the pavlova cool in the oven for 1-2 hours without opening the door until completely cooled.
  • Whip cream until soft peaks form, then spread over the cooled pavlova. Top with fresh mangoes and passionfruit for a delightful finish.
