Delightful and impressive pavlova dessert that's a breeze to create!
Ingredients:
  • 8 pavlova nests
  • 1 large mango, peeled, diced
  • Double cream, to serve
  • 1 egg yolk
  • 53.75 gm caster sugar
  • 2 passionfruit, halved
  • 50g butter, chopped
Instructions:
  • In a heavy-based saucepan, combine the egg, egg yolk, and sugar. Whisk together until well combined. Add 1/4 cup passionfruit pulp and butter. Cook the mixture over medium heat, stirring with a wooden spoon, for 7 to 8 minutes until it coats the back of the spoon. Remove from heat and let it stand for 5 minutes. Transfer the mixture to a bowl, cover the surface with plastic wrap, and let it cool completely.
  • Place a generous spoonful of tangy passionfruit curd into each nest, then add a dollop of creamy goodness and luscious mango slices on top. Ready to enjoy!
