Irresistible mini pecan pies with a mix of light and dark corn syrup, perfect for holiday indulgence.
Ingredients:
  • 1.5 cups pecan halves
  • 3 eggs, beaten
  • 0.5 cup light corn syrup
  • 0.5 cup dark corn syrup
  • 2 tablespoons butter, melted
  • 18 (3 inch) ready-to-bake pie shells
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Add pecans to a food processor and pulse until they are roughly chopped.
  • Combine sugar, eggs, light and dark corn syrup, butter, vanilla extract, and salt in a bowl, then gently fold in pecans. Fill each mini pie shell with 1/4 cup of the pecan mixture. Place pies on a baking sheet.
  • Bake in the preheated oven for 25-30 minutes until mini pies are lightly browned. Enjoy warm or cool completely before storing in airtight containers for up to one week.
