Mini roasted capsicum tartlets

Craft delicious mini tartlets with just four ingredients.
Ingredients:
  • 2 sheets frozen ready-rolled puff pastry, partially thawed
  • 2 x 200g tubs roasted capsicum dip
  • 75g capsicum
  • 125.00 ml small fresh basil leaves
Instructions:
  • Preheat your oven to 200°C/180°C. Lightly grease two 12-hole patty pans with a round base, each holding 1 1/2 tablespoons.
  • Cut 12 rounds from each pastry sheet using a 6.5cm cutter. Line the prepared pan with pastry. Fill each pastry case with 2 teaspoons of dip, then top with capsicum. Bake until pastry is golden, around 15 minutes. Allow to cool for 2 minutes, then garnish with basil before serving.
