Mini Sloppy Joes with Pulled Pork

Transform leftover pulled pork into delicious sloppy Joe sandwiches for a fun twist on a classic hamburger.
Ingredients:
  • 2 tablespoons unsalted butter
  • 1 cup finely chopped onion
  • 0.66666668653488 cup finely chopped green bell pepper
  • 1 cup beef stock
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon whole-grain mustard
  • 4 cloves garlic, minced
  • 1 teaspoon chili powder
  • 2 cups cooked pulled pork without sauce
  • 3 dashes hot pepper sauce (such as Tabasco®), or to taste
  • 10 mini-Kaiser rolls, sliced and warmed
Instructions:
  • In a large nonstick skillet over medium heat, melt butter. Cook onion and bell pepper for about 5 minutes, stirring occasionally. Add beef stock, ketchup, brown sugar, Worcestershire sauce, mustard, garlic, and chili powder. Stir until thoroughly combined.
  • Combine the pulled pork, hot sauce, salt, and pepper, and simmer over low heat until thickened and reduced, for 20 to 25 minutes.
  • Scoop up a generous 1/2 cup of the mixture onto each sliced mini Kaiser roll and serve right away for a delightful treat.
